Foie Gras, meaning ‘Fatty Liver’ is a delicacy associated with South West France, dating back thousands of years. It was discovered that geese preparing to migrate tremendous distances would gorge themselves on corn to sustain the journey, this gorging produced over sized livers which proved to be a delicacy. Traditional methods have continued for hundreds of years in order to recreate this stunning and exquisite delicacy. More recently, ducks have been used to produce Foie Gras, giving a slightly more robust, yet equally sublime taste and texture. All of the birds used to produce Foie Gras for The Fat Goose are free range and are produced under strict legislative guidelines. Our Foie Gras Entier is produced by preserving whole pieces of liver in it's own fat in a sterilised glass jar, only a delicate seasoning is added and the texture of the liver becomes dense yet silky and buttery to produce a pate like finish. This form of preservation enables Foie Gras to be stored for several years without refrigeration. Cooked Foie Gras, whether it be goose or duck, will be found in whole (Entier), blended (Bloc) or blended with pieces of whole liver (Bloc avec Morceaux).
