 This pure rendered goose fat really is a key ingredient with a mutitude of culinary uses. You dont need the likes of Delia or Nigella to tell you of its wonderful roasting properties, especially potatoes and parsnips, due to its extremely high burning point. The flavour that develops in the vegetables during the cooking process is quite sublime and once used, your potatoes will never want to see vegetable oil again.
Once opened it will keep in the fridge for up to 6 months and due to it being high in mono- and poly-unsaturates, Goose Fat is commonly referred to as a 'healthier fat'.
